Holiday Treats: Spritz

I'm not sure I can claim any British heritage for these cookies but just like Empire Cookies, Spritz were a staple of Christmas cookies baked by my grandmother and mother.
I remember that my grandmother would make dozens and dozens of Christmas cookies and give them to my parents early. They would then freeze them. There is nothing as tasty as a stolen, frozen Spritz cookie - usually a green food coloured tree with sprinkles. I'm sure that my own children have done the same although even when I make them I still steal them from the freezer before Christmas. I hope you enjoy them as much as we do.


2 1/4 cups all-purpose flour
3/4 cup white sugar
1/2 tsp. salt
1/4 tsp. baking powder

1 cup butter
1 egg
1 tsp. vanilla extract
1/2 tsp. almond extract

food colouring (optional)
sprinkles/coloured sugar (optional)


Preheat your oven to 375 degrees F.

Mix the flour, sugar, salt and baking powder in a big bowl. Cut in the butter until it resembles coarse crumbs.
Measure the egg and enough water to make 1/4 cup. Beat together. Add the egg mixture, vanilla and almond extract
to the crumb mixture. Mix well. Add food colouring to some of the dough if you like. Put through a cookie press onto a cookie sheet. (If you don't have one and you want one, spend the extra money to get a good one. Cheap ones are frustrating and just break. Bake at 375 for 10 to 12 minutes until lightly brown and set. Sprinkle with coloured sugar or sprinkles.
